Collard Wraps

These are a great appetizer or healthy & easy lunch to go! Recipe serves 6.

Ingredients

  • 6 Collards Leaves
  • Hummus or spread of your choice (we use our Smokey Seed Spread)
  • 2 Carrots
  • Sprouts

Directions

  • 1. Wash and pat dry 6 collard leaves. Cut along center stem on each side so you have two flat pieces of collards. Set aside. Grate or shred 2 carrots (tops removed).
  • 2. Lay out 3 Collard leaves. Place one tablespoon of hummus/spread about halfway down on the underside of the collard. Place about 1-2 Tablespoons (large pinch) of shredded carrots on top of the spread.
  • 3. Next add sprouts-really as many as you like. If you want big wraps, add alot of sprouts, if you want smaller, more bite-size, add less sprouts.
  • 4. Take the bottom edge of the collard where there is no filler and fold it up and over the carrot, sprout, spread mixture. Then begin to roll from the new bottom (where filler is)-think like you're rolling a burrito or sushi roll. You can put a little dollop of spread on the top corner of the collard so that when you roll it up completely, there is something that will help it stick together. From this point you can cut them in half or leave them large.
  • 5. Repeat steps until all collards are complete.
